    Corn Pudding

    1/2 cup (1 stick) Butter
    2 tablespoons Flour
    ¼ cup Sugar
    1 Egg
    ½ cup Milk
    1 ½ teaspoons Baking Powder
    1 lb. package Frozen Corn


    Preheat oven to 350.   Melt the butter in a large pot over low heat.  Combine the flour and sugar, and add to the pot along with the milk, egg and baking powder.  Stir well (you MUST use a wire whip) until the mixture is smooth (it will almost seem "foamy".you'll see!).
    Remove the pot from the heat and use a large spoon to stir in the frozen corn. Pour the mixture into a glass baking dish (spraying it beforehand with "PAM" will make clean-up easier). Bake for 40 minutes.

    There is  no cholesterol version.  Substitute margarine (such as Olivio) for the butter, no cholesterol liquid eggs (such as Egg Beaters) for the egg, and use skim milk!

    This recipe also microwaves well.  Microwave on high for approximately 10 to 15 minutes, stirring well at five minute intervals (actual cooking time may vary with the power of your microwave).  You'll be able to tell it is ready when it has started to congeal.

    Quantity can be halved, doubled, or tripled easily, adjust the ingredients accordingly.
