This broccoli salad recipe is so easy to make and always a big hit for holiday dinners and potluck. I usually double this recipe for family gatherings. The sweet yet tangy dressing really compliments the salad ingredients. You may be tempted to substitute the Miracle Whip with mayo but Miracle Whip really does add the perfect tanginess to this recipe. Broccoli Salad 1 pound broccoli florets (about 2 bunches) washed 1/2 pound cooked and crumbled bacon 1 cup shredded cheddar cheese Dressing 1 cup Miracle Whip 1/2 cup sugar 3 tablespoons white vinegar salt and pepper to taste Combine broccoli, bacon and cheese in a large bowl. Whisk together the dressubg ingredients and combine with broccoli mixture. Refrigerate until ready to serve. Tips: I keep this simple for family gatherings but you can add in any of the following: chopped red onion slivered almonds or sunflower seeds dried cranberries or raisins You might also want to experiment with the dressing. If you prefer it less sweet start with 1/4 cup sugar.

The last week of March is when I really got serious about using coupons. And while I probably spent as much that week as I used to in my pre-couponing days I am happy to have stocked up on at least a month’s worth of products like spaghetti sauce, toiletries, canned fruit, frozen vegetables and juice. I did this by pairing coupons with sales and, with the case of the toilet paper and paper towels I bought in bulk. Easter and company got me off track a bit but now that we are in the second week of April I am working on creating a monthly food budget that we can stick to. Rule 1 of My Food Budget – Limit Eating Out When I announced to my son and husband that we need to limit eating out to twice a month my son wasn’t happy to hear that those weekly pizza take outs were a thing of the past. We will still get pizza but it will be at the most once a month. My son’s favorite is Pizza Hut so it is agreed we get that once a month while mom and dad get to pick our second [...]

This video doesn’t represent everything I bought last week but will give you an idea of how I am stockpiling food and paper products. Since creating this video I have a lot more coupons stocked up and am excited to get them sorted for my next shopping trip. My local Tops Market has plenty of good sales this week and I have some coupons to go with those sale items. I will be also shopping at Wegmans and possibly Rite Aid. This is my first attempt ever at making my own video so please be kind . Am I the only one who hates the sound of her own voice on video?

I was looking for a simple chicken and rice casserole using ingredients that I had on hand. However, since I couldn’t find one I improvised and it came out great! I baked some boneless skinless chicken and shredded for this but this is one of those great leftover chicken recipes. I estimate that this whole recipe cost me less than $6 to make. I always get my boneless skinless chicken breast on sale for $1.99 a pound, the soup was on sale and of course rice is super cheap. What is nice about this recipe is most ingredients you probably have on hand and if not you can improvise. This will easily feed 4 people. Two adults and one picky child ate this, my husband went back for seconds and there is still almost a half a pan left. Simple Chicken and Rice Casserole 1 can cream of chicken soup 1/2 soup can milk 3/4 cup mayo 2 tablespoons lemon juice 1 small onion, chopped and lightly sauted 1 garlic clove, minced (I use the jarred minced garlic) 1/2 cup grated parmesan cheese salt and pepper to taste 3 cups cooked chicken, chopped or shredded (about 3 small chicken breasts) [...]

I recently watched a youtube video about a wife and mother of two young children who had a stockpile of over $30,000 in groceries. Personally I was very impressed but I was shocked at the negative comments that followed – even comparing extreme couponing to hoarding! Is exteme coupong hoarding? Is stockpiling food, paper products and other essentials some sort of mental illness? Here is the youtube video which is actually a short clip from TLC’s Extreme Couponing. Following the video I am going to post my thoughts to some of the many negative responses this video got. And here are some of the comments with my response: Extreme couponing is the same as hoarding… I think we have all seen those episodes of Hoarders with homes so out of control that you can’t walk through them and yes some even hoard food and paper products. One recent episode showed a man with lots of food stocked up – most past the expiration date, so yes many hoarders do hoard food as well. Hoarding is a disorder where someone is unable to let go of things to the point where it interferes with both relationships and quality of life. Their [...]

Friday night I made a quick trip to the Dollar Tree to pick up some essentials. I don’t shop there often but when I do I look for specific items. My last trip consisted of 12 items. Most were a great deal but as you can see I actually made a mistake and paid a little more for one of the items on my list. 2 bottles Breck for Kids moisturizing body wash. 1 Bag of clothespins. Besides hanging clothes I use them for clipping bags of food like chips closed. Why pay more for chip clips? 4 cans Cambell’s cream soups (2 cream of chicken, 2 cream of mushroom). My local Tops Market actually had these on sale which I could have paired with coupons so I actually ended up paying more. Any couponer who is pinching pennies knows that every penny counts. 2 Easter Cards. Normally cards at the Dollar Store are 2/$1 but it looks like special occasion cards are a bit more. 1 large package tissue paper in Spring colors. 1 large Easter gift bag The bag is actually for a baby shower but it has Spring colors and umbrellas on it so I doubt [...]

I recently joined a coupon clipping service called The Coupon Clippers to help me further maximize savings. Since I am trying to stock up on specific coupons this is a great way to get coupons for products I normally buy for just a small clipping fee per coupon. There are many great sources for coupons but why not take advantage of a site that allows you to pick and choose exactly what you want. One great deal I scored was for Tyson chicken. I am not usually loyal to just one brand but I like that they are all natural and it is the only brand that my picky son will eat. I got several for .75 off one, which will double at my local grocery store for $1.50. And because it is on sale this week I will get another $1.00 off minus the clipping fee per coupon of 10 cents so total savings-$2.40 (clipping fees vary per coupon. We go through about two bags of chicken a month and if I continue to pair coupons with sales at this rate I will be saving around $60 a year on just one product that we buy anyway. Not counting the [...]

It has been forever since I have updated this blog and I am embarassed to say that I have also slowly gotten away from the very reason I began this blog-to save money on groceries. However, after being quite lax about it my husband and I have noticed that not only are we spending way too much on groceries, we are not even paying attention to what we are spending which is hurting our overall budget. That is why we have decided to start stockpiling food and always have a full pantry and freezer filled with items that we get on sale. When my husband first brought up the idea to stockpile food it brought to mind those that plan for natural disasters. Some may think it is silly but I can understand the need for always being prepared. But that isn’t our motivation. Our motivation is to always have food and other consumables on hand when needed. Why not stock up when items are on sale instead of buying one of something just because you are out of a cleaning product or perhaps need a few ingredients for a recipe you want to make? Picking something up at the [...]

Are you spending way too much of your monthly budget on groceries? Would you like to cut your grocery bill in half without going to extremes? If so then the Power Couponer eBook is a good place to start. I am always on the lookout for books and eBooks that teach me how save money, get organized or any other topic that has to do with self improvement, so I was instantly intrigued with the Power Couponer eBook. Extreme Couponing Many of us are familiar with the hit show on TLC called Extreme Couponing. And while most of us will probably not want to go to that extreme it just makes sense to want to save money on the products that we are purchasing anyway. The Power Couponer shares plenty of strategies on how shop for maximized savings as well as a few simple yet creative ways to get coupons for just the items that you need! To be honest when I first started reading the book I wasn’t so sure that I would learn anything that I didn’t already know.
In tough economic times, many families are having a hard time making ends meet. The price of groceries hasn’t helped many, as the price for basic ingredients has gone up, making it even harder for some to cope with the changes. There is hope though. The online world is flooded with options to help anyone save money on their grocery bill, and doesn’t require a lot of research or coupon clipping. It just requires a little savvy and a printer. The easiest way to save money is to look into online grocery coupons. Many people haven’t discovered the prowess of online grocery coupons, but that is soon going to change. Grocery stores do not have the marketing money to continually pay for print ads, and other forms of traditional mill advertising, therefore they go online and offer deals for people to get on their own. This way they save money, and customers can save money for being savvy shoppers. The discounts are usually found on items that people buy on a regular basis, so it’s not going to be coupons for things that will sit on a shelf for a great amount of time. Consider the old route of saving [...]

The latest television craze brought forth by TLC has gotten millions of people questioning whether extreme coupon hunting could in fact work for them. The easiest answer is yes, but upon further investigation the answer starts to lose steam. Not everyone can take advantage of all coupons, and not everyone will enjoy the arduous task involved with finding the deals to use on a consistent basis. When it is all considered, it’s easy to see why there are pros and cons to extreme couponing. While some people might find it fascinating, others will give up quickly. Consider the following pros and cons, and then consider whether it’s something worth chasing in your life. On the pros side, people can save serious money. Extreme couponing has shown that people of all backgrounds can walk away from a store with a lot of different groceries and pay next to nothing, and in some cases pay nothing at all. This type of savings is a welcome thing for anyone who is living on a budget. Another pro to extreme couponing is for everyone that is looking to stockpile things in case of emergency. Natural disasters can strike at any time, and with coupons [...]

I originally started the Eating on a Budget website back in 2006. At the time I didn’t have a direction in mind for the website, I simply added recipes and various articles about saving money. However, I don’t think I ever really gave my visitors what they were really looking for. With my own circumstances I decided it was time to turn that website into a blog complete with a plan of action for slashing my own food budget, which would hopefully help others as well. My Story As a stay at home mom money is always tight. And although it always works out on paper, it seems that in reality making the money stretch until the end of the month is always hard. We don’t spend a lot on extras. I always shop around the sales for kids clothes (I do great at Target, buying at the end of the season for next year), spend very little on entertainment and I can’t even remember the last time my husband or I bought anything for ourselves. However, in spite of these good spending habits we also have some bad spending habits. Changing Bad Spending Habits I will admit that we have two [...]
