Lemon Loaf
1 cup sugar
1/2 cup butter or margarine
2 eggs, beaten
1/2 cup milk
Grated rind of 1 lemon
1 1/2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
Topping:
Juice of 1 lemon
1 tablespoon sugar
Preheat oven to 325. Cream butter and sugar. Add eggs, milk and lemon rind. Combine dry ingredients and add to mixture. Mix and put in 2 small greased loaf pans. Let rise 20 minutes. Bake for 45 minutes or until done. Combine lemon juice and sugar and pour over bread while still warm.
