Pierogi Casserole
1 box lasagne noodles
8 ounces velveeta cheese, cubed
6 large potatoes, peeled, cubed and cooked
1 small onion, chopped
1 stick butter
Preheat oven to 350 degrees. Cook noodles according to package directions; drain. Drain potatoes, add velveeta cheese and mix with potatoes. Fry onion in butter until soft. In 13 x9 x2 dish layer in the following order: 1/3 of the noodles, 1/2 potato mixture, 1/3 onion mixture. Repeat layers one more time and top with the rest of the noodles. Spread remaining onion mixture on top. Cover with foil and bake 30-40 minutes or heated through.
