Porcupine Meatballs
1/2 cup oncooked rice
1-1/2 pounds ground beef
1/2 cup chopped onion
1/2 cup green peppers, diced
1/2 cup celery, diced
1 egg, beaten
2 teaspoons prepared mustard
1 teaspoon salt
2 cans tomato soup
2 soup cans water
Preheat oven to 350 degrees. Mix all ingredients except soup and water. Make meatballs at least 2 inches in diamter. Place in baking dish. Mix together soup and water and pour over meatballs. Cover and bake for 1 1/2 hours. 6 servings.
