Tangy Pork Sandwiches
I came across this recipe while searching for a way to use up leftover pork tenderloin. This recipe is definately a keeper! I was a bit nervous about using the cayenne pepper because I don't like anything too spicy but this definately complemented these sandwiches perfectly!
1/4 cup butter
1/4 cup worcestershire sauce
2 tablespoons lemon juice
2 tablespoons sugar
1/4 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 pound boneless pork, cooked and sliced thin (an electric knife works great for this)
4 sandwich rolls
Melt butter in a large saucepan over low medium heat. Add next 6 ingredients and bring mixture to a boil, stirring often. Add pork and let simmer until heated through. Serve on rolls.
Tip: I double the sauce so that I have extra to dip the sandwich in "au jus" style.
