Zucchini Pancakes
1/3 cup bisquick
1/4 cup grated parmesan cheese
2 eggs, lightly beaten
2 cups shredded zucchini
2 tablespoons butter or margarine
In a bowl, combine bisquick, cheese, pepper and eggs just until blended. Add the zucchini and mix well. Melt butter in large skillet. Drop batter by 1/3 cupfuls into skillet and press lightly to flatten. Fry until golden brown on each side, approximately 3 minutes per side. Yield 5 pancakes.
